How might I export a separate text file including all OCR'd text?

If you do a Document Export step in your process you can adjust the Content Format settings to be "TXT".

Excellent! For some reason I assumed the TXT export would just be a flat-file representation of the extracted data.

@Sdurbin You can do that too if you want on a different export by using the Metadata settings.
